Roast Carrots, Whipped Feta & White Truffle Honey

Instructions

1. Roast the carrots

Peel and trim carrots

Toss with olive oil, salt, pepper

Roast at 200°C for 20–25 mins until caramelised

2. Make whipped feta

Blend feta with yoghurt until smooth and creamy

3. Plate

Spread whipped feta on the base of a plate

Lay roasted carrots over the top

4. Finish (key step)

Drizzle white truffle honey over the carrots

Add crushed pistachios

Sprinkle herbs

Ingredients (serves 2–4)

2 bunches heritage carrots (or regular carrots)

150g feta

2 tbsp Greek yoghurt

1–2 tbsp white truffle honey

1 tbsp olive oil

Small handful pistachios (or walnuts)

Fresh thyme or dill

Salt & black pepper
