Lomo Iberico de Bellota, Manchego & Fig

Instructions

1. Prepare the base

Arrange rocket lightly on a plate.

2. Layer

Drape Lomo Iberico slices naturally over the leaves.

Add slices of Manchego in between.

3. Add sweetness

Slice figs and place around the plate (or small dots of fig jam).

4. Dress

Drizzle with olive oil.

Add a pinch of sea salt and light black pepper.

5. Finish

Keep it loose, slightly imperfect—more natural, less structured.

Ingredients (serves 2)

80g Sliced Lomo Iberico de Bellota

80g Manchego cheese (thinly sliced or shaved)

2–3 fresh figs (or fig jam if out of season)

1 tbsp extra virgin olive oil

Handful of rocket (arugula)

Flaky sea salt

Black pepper
