Baked Cod, Olive Oil, Lemon & Herbs

Instructions

1. Prepare the fish

Bring the cod to room temperature. Pat dry and season lightly with sea salt and freshly cracked black pepper.

2. Build the base

Place the fish in a baking dish with garlic, lemon slices, and herbs.

Drizzle generously with olive oil, ensuring the fish is lightly coated.

3. Bake gently

Cook at 180°C for 12–15 minutes, until the fish is just opaque and flakes easily.

4. Finish (key step)

Remove from the oven and spoon over the warm olive oil and juices.

Finish with fresh herbs and a final drizzle of olive oil.

Ingredients (serves 2–3)

2–3 cod fillets

3 tbsp extra virgin olive oil (AOP Aix-en-Provence)

1 lemon (sliced + zest)

2 garlic cloves (lightly crushed)

Fresh thyme & parsley

Sea salt & black pepper
