Avocado, Lime & Caviar Tartine

Method 

  • Gently toast buttered brioche until lightly golden, soft at the centre.
  • Blend avocado until completely smooth, seasoning delicately with lime and olive oil.
  • Spread a thin veil of crème fraîche, then layer the avocado with precision.
  • Spoon caviar on top in a neat mound, keeping it untouched.
  • Finish with fine chive tips and a whisper of lime zest.

1. Toast the brioche

Gently toast buttered brioche until lightly golden.

Keep the centre soft and delicate.

2. Prepare the avocado

Blend the avocado until completely smooth.

Season lightly with lime juice and olive oil.

3. Build the base

Spread a thin layer of crème fraîche over the brioche.

Add the avocado on top, smoothing it neatly into place.

4. Add the caviar

Spoon the caviar on top in a neat mound.

Keep it untouched as the focal point.

5. Finish

Sprinkle with finely chopped chive tips.

Add a light touch of lime zest before serving.
